Kesari (rava/suji/semolina) Milk rava kesari recipe - Sheera or kesari is one of the most made sweet recipes from south Indian cuisine. It is made during festivals, celebrations and even for breakfast. I made this during one of the Ganesh puja days. You can cook Kesari (rava/suji/semolina) using 9 ingredients and 6 steps. Here is how you cook that.

Ingredients of Kesari (rava/suji/semolina)

  1. You need 2 tbls of ghee.
  2. You need 10 of cashew.
  3. You need 1 tbls of raisin.
  4. Prepare 1/2 cup of rava/suji/semolina.
  5. Prepare 1 cup of water.
  6. It's 1 cup of sugar.
  7. It's 1 tsp of Food colouring (orange).
  8. It's 1/4 of cardamom powder.
  9. You need 1/4 cup of ghee (for final adding).

Indian Semolina Pudding is one of the simplest sweet recipes. The North Indians refer to it as Sooji or Suji Halwa while the South Indians know it as Rava Kesari or simply Kesari. As I mentioned, it is one of the simplest sweets to make among. Kesari / Rava Kesari - the name itself makes my mouth watery.

Kesari (rava/suji/semolina) instructions

  1. Heat 2 tbsp ghee / clarified butter and roast 10 cashews, 1 tbsp raisins on low flame. once the cashews turn golden brown, keep aside..
  2. Now in the same ghee roast ½ cup rava/semolina. use fine / coarse variety rava. roast on low flame for 5 minutes or till it turns aromatic. keep aside..
  3. In a large kadai boil 1 cup water. keeping the flame on low, add in ½ cup roasted bombay rava. stir continuously till the rava absorbs water and no lumps are formed..
  4. Add 1 cup of sugar (depending on sweetness you prefer). keep the flame on low, stir well till the sugar dissolves. furthermore add 2 tsp kesari food colour..
  5. Also and ¼ cup ghee and stir continuously. make sure the mixture is combined well and no lumps are present. cover and simmer for 2 minutes or till rava gets cooked well completely..
  6. Additionally add roasted cashews, raisins and ¼ tsp cardamom power. mix well till the rava kesari separates from pan. finally, serve rava kesari / kesari bath as a dessert..

More than me, my husband is a die hard fan of this Rava Kesari. Though it is a simple recipe and used to cook, I dont know why I have not posted it till now. Rava Kesari is a typical south Indian sweet dish made with semolina also commonly known as Bombay rava or sooji. When sugar dissolves add rava while stirring to avoid lumps and cook till its almost dry. Grease a baking pan or a plate and pour this mixture on it.
